The simpler clock thermometers only allow you to read off the temperature. This is done by looking at where the “hour” hand is. Others may also have an actual clock as well, thus allowing you to read the time and the temperature. And others may also have added features such as barometers or hydrometers, thus allowing you to measure atmospheric pressure or humidity.
Clock thermometers, like Galileo thermometers, work of a very simply physical principle. Depending on the temperature, materials expand and contract at different rates. If you attach two different materials together, and form a coil, then this coil will shrink or expand depending on the temperature. When this happens, the temperature hand moves in a circular fashion, and points at the correct temperature. Galileo Thermometers - How they work, and how to use them

A Galileo thermometer, named after Galileo Galilei, is a long thin tub filled with liquid and several colored balls. It works since each ball has a slightly different density. The different balls, which come in different sizes, have a small metal counter-weight attached to the bottom, which change the overall density.

As the temperature changes, the density of the liquid also changes. Therefore, balls with higher density sink to the bottom, and those with lower densities float to the top.

For example, if we assume that the thermometer contains 4 balls, such that they are marked and colored and numbered as follows

-  Blue ball is 60 degrees
-  Green ball is 65 degrees
-  Yellow ball is 70 degrees
-  Purple ball is 75 degrees

and that the surrounding temperature is 67 degrees, then both the blue ball and the green ball sink to the bottom while the yellow and purple ball float to the top. Therefore, you can read the temperature of this Galileo thermometer to be somewhere between 65 and 70 degrees Fahrenheit. Although not as accurate as other thermometers, this approximate reading can be enough for most purposes.
